Top recipes mention fine champagnes, like the Dubonett Rouge, but any other champagne will do to make this fine red tonic drink. You can also use good quality sparkling wine and adjust the bitters to taste. One can also experiment with peach, orange or even chocolate bitters to make this fine rosy-hue cocktail. Best served chilled.

Alfonso vermouth cocktail


1 oz Sweet Vermouth

2 Dashes Angostura Bitters

1 tsp Superfine Sugar

Top up with Champagne

Mixing method:

Sprinkle the sugar over ice cubes in a highball glass. Add the Angostura Bitters and the Vermouth. Top up with Champagne and stir.

You can add a simple orange twist.
